About Nabedana – Kozaki Brewery
Nabedana / Kozaki Brewery is a long-established sake brewery founded in 1689, which began brewing sake in front of the gates of Naritasan Shinsho-ji Temple. Currently based in Kozaki Town, Katori District, Chiba Prefecture, the brewery hand-brews all of its brands—including “Jinyu” and “Fudo”—entirely in-house by its own staff. The brewery handles every step of the process in-house, from steaming rice and making koji to aging and bottling. Through traditional techniques and meticulous quality control, they produce sake that is loved by many.
